Scopriamo l’Hygge danese e queste brioche allo zucchero

Così si apre un articolo della BBC dedicato all’Hygge. Anche l’Huffington Post ha cercato di spiegarne il significato, ma l’Hygge “è qualcosa di tanto danese che non si può tradurre”. Infatti, se il termine accogliente potrebbe portarci nella direzione giusta non riuscirebbe comunque a spiegare in modo profondo questo concetto. Ecco allora che Hygge è piuttosto un’atmosfera, rilassata, piacevole, accogliente, nella quale si gode della compagnia di familiari, amici, persone care che ci fanno stare bene. La luce calda di una candela è Hygge, una coperta di lana morbida che ci avvolge sul divano è Hygge, il profumo di una torta che cuoce nel forno è Hygge e lo è anche una tazza di tè fumante fra le mani o qualche piccolo fiore sparso per la casa. L’Hygge è quindi qualcosa che ci fa stare bene e che ci soddisfa.
Per una domenica tranquilla e dedicata al riposo ho preparato queste brioscine allo zucchero, morbide e fragranti (insomma un po’ hygge), dal successo che hanno avuto, so che dovrò rifarle al più presto.
La ricetta è di Olga ed Emanuela e la trovate nel loro libro “Zero Glutine.

Brioscine con lo zucchero 250 g di mix per dolci lievitati Molino Dalla Giovanna
115 g acqua
115 g di latte
30 g di burro fuso
40 g di zucchero
3 g di sale
14 g di lievito fresco
farina di riso per infarinare
latte per spennellare
Preparazione
Versate nella ciotola dell’impastatrice l’acqua, il latte, lo zucchero e il lievito. Aggiungete piano piano il mix e amalgamate bene. Versate il burro fuso e aggiungete il sale. Impastate per 5-10 minuti. Coprite la ciotola con della pellicola trasparente, fate lievitare l’impasto in luogo tiepido per un paio d’ore o finché l’impasto non sarà raddoppiato*.
Infarinate una spianatoia, con l’aiuto di due spatole lavorate l’impasto, ricavate 8 pezzi di pasta, formate dei salsicciotti e intrecciateli ognuno su se stesso formando delle treccine. Posatele su una teglia foderata di carta forno, copritele con la pellicola e con un canovaccio pulito. Lasciatele lievitare ancora un’ora. Scaldate il forno a 190° C. Spennellate le treccine con il latte e infornatele per circa 15 – 20 minuti**.
Sfornatele, spennellatele ancora con il latte e cospargete lo zucchero semolato.
*   Di solito faccio lievitare l’impasto all’interno del forno dopo averlo leggermente intiepidito e spento.
** Il forno è abbastanza alto e le treccine tenderanno a dorarsi in fretta, fate attenzione a non farle bruciare, per il mio forno sono stati sufficienti 18 minuti.

This is the beginning of an article on BBC News about Hygge. Huffington Post also tried to explain this word, but Hygge “is something so Danish that can not be translated.” In fact, even if sometimes somebody translates it with cosiness, this word can’t really explain the meaning. So, Hygge is rather a relaxed and pleasant feeling. The warm light of a candle is Hygge, a soft wool blanket around you is Hygge, the smell of a cake is Hygge, such as a cup of steaming tea in your hands or some flowers in the house. Hygge is something that satisfies you.
I wonder if these little cakes can be hygge too… I think so, they are so delicious and they were so apreciated that I’m sure I’ll bake them again.

Brioscine (I used the mix Molino Dalla Giovanna)
115 g water
115 g of milk
30 g melted butter
40 g of sugar
3 g of salt
14 g of fresh yeast
rice flour for dusting
milk for brushing
In a bowl of a stand mixer combine water, milk, sugar and baking powder. Add the flour mix and stir well. Add butter and salt. Knead for 5-10 minutes. Cover the bowl with plastic wrap, allow the dough to rest in a warm place for a couple of hours.
Dust the surface of the dough and knead it. Divide the dough into 8 equal pieces. Gently elongate them by patting, squeezing and rolling back and forth with your hands on a flour dusted surface to form 8 ropes. Place them on a prepared baking sheet, gently braid the strips, cover with plastic wrap and let rest for 1 hour. Preheat the oven to 190 ° C. Brush the braids with milk and bake for about 15 – 20 minutes.
Brush them with milk and sprinkle with granulated sugar.
