Safari e biscotti, anzi “rusk”

(For english version scroll down) Il suono della sveglia ha squarciato il silenzio della stanza. Con movimenti ancora goffi di sonno e diversi strati di abiti addosso ci siamo riuniti per la prima tazza di caffè bollente nella sala comune. La partenza per il safari anticipa l’alba, perché molti animali del bush escono dalle loro tane alle prime luci del sole. Ci siamo accomodati sulla jeep con le coperte sulle spalle per ripararci dall’aria gelida del mattino, e dopo un paio d’ore, con un bottino di avvistamenti e fotografie di tutto rispetto, ci siamo fermati per una sosta in una radura, dove il ranger ha allestito una piccola colazione con tè, caffè e biscotti. Da una grande scatola di latta ci sono stati offerti i famosi rusk sudafricani, ma trattandosi di biscotti di grano, le mie ragazze non hanno potuto assaggiarli.

Non ho creduto ai miei occhi, quando nella libreria dell’aeroporto, poco prima del rientro in Italia, mi è capitato fra le mani questo libro di cucina senza glutine, The South African Gluten free Cook Book, con all’interno la ricetta dei rusk!

Tradotto letteralmente in italiano rusk significa fetta biscottata, anche questi biscotti richiedono una doppia cottura in forno, ma a differenza delle fette biscottate nostrane i rusk hanno un impasto piuttosto dolce. La loro cottura permette di mantenerli  a lungo, se conservati in una scatola di latta, infatti, si possono mantenere anche per una decina di giorni.

Ingredienti

200 g di farina di riso
180 g di farina di riso integrale
100 g di amido di patate
80 g di tapioca
30 g di latte in polvere
10 g di gomma xantana
250 g di burro
225 g di zucchero bruno chiaro
150 g di cocco essiccato
100 g di mandorle macinate
20 g di lievito in polvere
5 g di bicarbonato di soda
5 g di sale
500 g yogurt greco
4 uova

Preparazione
Mescolate le farine di riso con l’amido di patate, la tapioca, il latte in polvere e la gomma xantana. Impastate il burro con le farine fino a quando non otterrete un composto bricioloso. Aggiungete lo zucchero, il cocco, le mandorle macinate, il lievito, il bicarbonato di sodio e il sale. Mescolate bene. Unite lo yogurt e le uova in una ciotola e mescolate bene. Aggiungete agli ingredienti secchi e mescolate. Versate la pastella in uno stampo di 30 x 40 cm. Usate le mani bagnate per appiattire la parte superiore. Cuocere in forno preriscaldato a 180 ° C per 30 – 35 minuti, o fino a quando uno stuzzicadenti inserito nel centro esce pulito. Lasciate raffreddare nel vassoio, quindi estraetelo dallo stampo e tagliatelo a pezzi. Posizionate i rusk su una teglia pulita ricoperta di carta forno. Abbassate la temperatura del forno a 50 ° C e asciugate i biscotti per 6-8 ore o per una notte. Conservate in un contenitore ermetico.

The alarm broke the silence in the room. Almost asleep, wearing different layers of clothes, we met in the hall for the first cup of hot coffee. We usually left for the safari before sunrise, since many animals get out of their dens in the early sunshine. We sat on the jeep with thick blankets on our shoulders and after a couple of hours of sightseeing, we stopped for a break in a glade where we had a quick breakfast with tea, coffee and biscuits. From a large tin box we were offered the famous South African rusks, but since they contained wheat, my girls could not taste them. I loved those crunchy and flavored biscuits and I was so sad that my daughters could not taste them.

I was so surprised when at the bookshop of the airport I found this gluten free cooking book, The South African Gluten free Cook Book, with the recipe of the rusks inside!

Thanks to their “double” cooking they last long time, store them in an airtight container, they will be good for more than ten days.

200 g white rice flour
180 g brown rice flour
100 g potato starch
80 g tapioca
30 g fat free milk powder
10 g xanthan gum
250 g butter
225 g light brown sugar
150 g desiccated  coconut
100 g ground almonds
20 g baking powder
5 g bicarbonate of soda
5 g of salt
500 g double cream yogurt (Greek yogurt)
4 eggs


Mix the rice flours with potato starch, tapioca, milk powder and xanthan gum. Rub in the butter until the mixture resembles breadcrumbs. Add the sugar, coconut, ground almonds, baking powder, bicarbonate of soda and salt. Mix well. Combine the yogurt and eggs in a separate bowl and mix well. Add to the dry ingredients and mix to form a stiff batter. Spoon the batter into a greased 30 x 40 cm baking tray. Use wet hands to smooth the top. Bake in a preheated oven at 180° C for 30 – 35 minutes, or until a skewer inserted into the center comes out clean. Leave to cool in the tray, then turn out and cut into pieces. Place the rusks on a clean baking tray. Lower the oven temperature to 50° C and dry the rusks for 6-8 hours, or overnight. Store in an airtight container.
